After watching a bunch of other striper fillet vids, I think this guy has the most skill and looks like he does it alot. As a dental surgeon, I can see this guy has some real skills–he doesnt recut incisions, he uses long accurate cuts, hes fast because he know precisly where to cut, the carcus is symetrical and there is very little meat left on the skeleton. Plus each side is cut almost with identical strokes. This is the technique to learn in my opinion.
