Its been years since we took a vacation to Maui without the kids and we have Erin and Ken to thank for a wonderful time in Hawaii. Yesterday was EPIC with beautifull weather for the ceremony despite rain and clouds on both days before and after. The beach was fantastic, a small intimate setting just a mile south of Wailea. That evening’s dinner was a food orgy. I can’ remember ever having a meal quiet like that ever. Dinner was at IL Teatro at Capische were Chef Chris Kulis (formerly from the Napa French Laundry and a Graduate of the CIA), his assistant Chef Courtney, and sommelier Mathew, prepare and present the food and wine right in front of you in an interactive and personal setting at special tables designed around the working kitchen. The evening started off with Proscuitto, Asparagus and Goat Cheese micro salad, and an Ahi Carpaccio followed by Seared Squab, Quail Saltimbocca, Rib Eye of Beef, Crispy Skin Lehi (an Hawaiian snapper), with a Herb Gnocchi. Along with the entries came a flood of fine and rare wines. I counted 8 different wines and a 1942 Tequilla (after that I lost count and all is a blur). Oh yeah, there were two deserts, a blow torch and wedding cake as well. The weekend is not over yet, tomorrow is an all day catamaran expedition to Lanai which should be fun.
